Pre-heat oven to 400F
Place tomatillos, jalapeno, yellow onion, and garlic on a sheet pan and place in the oven for 10-12 minutes to get some roast color on the vegetables.
Combine the roasted veggies in a food processor and pulse until you have a chunky consistency.
In a large skillet, add Oaxaca cheese and PuraVida Fajita Rajas.
Bake for about 10-12 minutes until cheese is golden brown and melted.
Remove skillet from oven, top with roasted salsa verde and serve with warm flour tortillas. Enjoy!
